1/4cFresh lemon juice
1/4cWater
2cCilantro, chopped and packed
1/4cFresh coconut, chopped
1/4cOnion, finely chopped
2tbChopped gingerroot
2tsChopped fresh red chile
1tsSugar
1tsSalt
1/4tsGround black pepper

Combine lemon juice, water and 1/2 c. cilantro in blender and puree. Add remaining cilantro 1/2 c. at a time, reducing mixture to a puree each time. Add remaining ingredients and reduce mixture to a puree again. Serve immediately. Makes about 2 cups NOTES : Very fresh tasting. This recipe is from a Polish woman I knew in Panama! She got it from a Hindu friend. Unlike the rest of the chutney recipes uploaded tonight, this one is fresh and not cooked
